Preparation for 2/5 people
Bring water (1 litre of water each 100 g of pasta) to rolling boil and slightly salt it.
Add in a pan a little extra virgin olive oil, cooking water (usually equal to the weight of the sauce) and the ragout.
The ingredients of ragout are very simple: Cockerel meat, vegetables for the cooking juice, salt, pepper and aromatic herbs. Slow cooking and genuine ingredients are the peculiarity of this ragout.
Slightly warm the compote of caramelised onions.
The compote is prepared with red onions, vinegar, sugar and a pinch of salt.
Add cooking water in the pan.
Drain the pasta “al dente” after approx. 7 minutes.
Finish cooking it in the pan with the ragout for 2 more minutes.
