Thin Egg Tagliatelle with marjoram tomatoes soup, Violet Brindisi artichoke and ewe's ricotta quenelle

Ingredients contained in the package:

Thin egg tagliatelle 250 g.
Tomatoes 370 g.
Brindisi Artichoke 310 g.

Additional ingredients to be required:

• 120 g. ewe's ricotta
• garlic
• marjoram
• extra virgin oil
• dill and edible flowers (for garnish)
• enough salt and pepper

Preparation for 4 people

Strain the tomatoes and sautè them in a pre-heated non-stick frying pan.
Then with the help of a bell blender, blend the tomatoes adding fresh marjoram and extra virgin olive oil, thus obtaining an emulsion.
Filter the sauce in a fine mesh strainer.
Strain the artichokes from the oil using it as the basis for the preparation of the thin tagliatelle.
Heat the oil with two cloves of garlic without the core: once golden brown add the julienne cut artichokes.
Bring a pot of pre-salted water to the boil and plunge the thin tagliatelle in it.
After some minutes of cooking, strain them and sautè with artichokes, moderated with salt and pepper.

Serve in a soup plate putting the sauce, obtained with the tomatoes and the marjoram, slightly warmed and place the nests of thin tagliatelle and the artichokes on it.

For the finish: form with the help of two soup spoons some ricotta quenelles and place one on the thin tagliatelle.

Garnish with some little line of fresh dill, edible flowers and serve.
