Spaghetti with smoked aubergines cream, tomatoes of Pachino and Cantabrian anchovies

Ingredients contained in the packaging:

Spaghetti 500 g. (of which 320 gr. for the preparation)
Aubergines cream 160 g.
Tomato sauce 350 g.
Cantabrian anchovies 55 g.
Pine nuts 50 g.

 

Additional ingredients to be acquired:

• Extra virgin olive oil
• 1 clove garlic
• Parmesan Reggiano cheese as needed
• Basil (some leaves)
• Date tomatoes (about 10)

Preparation for 4 people:

Brown the crushed garlic with a little extra virgin olive oil in a casserole.
Remove the garlic when it is browned, add 2 fillets of cut anchovies and lower the flame, then shortly afterwards (the anchovies have to cook a little otherwise they will release a bitter taste) add the smoked aubergines cream and after a minute the tomatoes sauce; mix well and cook for some minutes with a little cooking water and the half cut tomatoes. Season with salt and pepper.
Boil the water to cook the pasta.
Meanwhile toast the pine nuts in the oven at 180° during 5 minutes.
Cook the spaghetti in abundant salted water, drain them (keep a little cooking water) and mix them with the sauce, adding extra virgin olive oil, basil, previously cut and parmesan cheese and if it should be dry add 1 tablespoon of the remaining cooking water.

Serve the spaghetti in the centre of the plate and garnish them with the anchovies and the pine nuts.
