RISOTTO WITH SAFFRON, CAPERS AND PISTACHIOS

Ingredients contained in the package:

1 Carnaroli Rice 500 g
1 Salted capers 100 g
1 Chopped pistachios 100 gr. (50 gr. for preparation)
1 Organic saffron pistils 0,25 g

Additional ingredients to be acquired:

• Natural water 1500 ml
• 3 teaspoons extra virgin olive oil (for capers and rice roasting)
• 8 teaspoons extra virgin olive oil (for rice creaming)

 

Preparation for 6 people

Quickly rinse the capers under cold water.  Put the capers in a saucepan with 500 ml cold water and bring to boil during a minute.
Drain the capers keeping the water apart that will be used to cook the rice.
Meanwhile, roast the chopped pistachios in a pan covered with parchment paper in an airy oven at 140° during 10 minutes.
Brown the capers during 2 minutes with extra virgin olive oil in a saucepan then add the rice and roast during 1 minute.
Add the water of the capers, the saffron and cook during 2 minutes.
When the water of the capers will be evaporated, add slowly the previously heated natural water until reaching the optimal cooking for about 15 minutes on medium heat.
Let rest for 1 minute.
Add extra virgin olive oil mixing for about 1 minute till obtaining a homogenous creaming.

Serve the rice on flat dishes which should result "on wave", sprinkling it with the roasted chopped pistachios.
